THANDAI

Thandai is a refreshing summer cooler drink recipe made during Indian festivals.This famous drink is traditionally prepared as an offering to Lord Shiva during the festival of Maha Shivaratri & the festival of colors,Holi.It is also known as "sardai".It is a cold drink prepared with a mixture of almonds,fennel seeds,melon seeds(char magaz),poppy seeds(khus-khus),rose petals,pepper,cardamom,saffron,milk & sugar.This thirst-quencher is tasty & cools you down.So let's start....





INGREDIENTS:-

Whole Milk-4 cups(You can also use low-fat or soy or almond milk)
Whole almond-1/2 cup
Melon seeds(char magaz)-2 tbsp(if n't available,then use pumpkin seeds)
Poppy seeds(Khus-khus)-1 tbsp
Cardamom pods(elaichi)-10
Fennel seeds(saunf)-1 tbsp
Peppercorns(kali mirch)-8
Rose water-1 tbsp(you can also use 1/2 tsp rose essence or 1 tsp dried rose petals)
Sugar-1/2 cup(or adjust according to taste)
Chopped pistachio-handful
Saffron-few stands
Rose petal-handful
Mint leaves-handful


METHOD:-

1-Soak almonds in water overnight or for at least 5-6 hours.Then remove from water and discard skin,set aside.
2-Soak melon seeds,poppy seeds and fennel seeds in enough water for 2 hours.Then drain and set aside.
3-Boil milk,add sugar and allow to dissolve.Once the sugar dissolves turn off the heat and allow to cool.
4-Grind nuts and spices in the mixture,make a fine paste using 1 cup of water or milk.
5-Add the ground paste to the milk and mix well.Then cover and leave aside at least 1 hour.
6-Strain the mixture through a fine mesh sieve,pressing down on solids.
7-Add saffron stands and rose water or rose essence or dried rose petals to the strained milk and mix well.Refrigerate until chilled.
8-When ready to serve,mix thandai then pour into glasses garnish with chopped pistachios,rose petal and mint leaf and serve chilled.

NOTE-You can also serve without straining.
