ODISHA FAMOUS ALOO-MATAR CHAAT

Aloo-mattar chat is a very famous chatpata street food in Odisha(a northeastern state of India).Its main ingredients are dried peas(yellow/white/green) and potato.Sometimes it is served with dahi bara(dahi vada) or gup chup(panipuri).This chat is my all time favorites street food.



INGREDIENTS:-

Yellow Peas-1cup
Boiled potatoes-2 large(peel skin and mash them well)
Chopped Onion-1 large
Chopped Tomato-1 large
Grated ginger-garlic-2 tbsp
Turmeric powder-1 tsp
Red Chili powder-1 tsp
Coriander powder-1/2 tsp
Cumin powder-1/2 tsp
Dry mango powder-2 tsp
Water-2 tbsp
Oil-1 tbsp
Salt as per taste

FOR ASSEMBLE:

Chopped onion
Chopped green chili
Chopped Coriander leaves
Grated cucumber
Grated carrots
Tamarind chutney(see recipe here)
Coriander min chutney(see recipe here)
Sweet curd/yogurt(beat smoothly with 1 tbsp of sugar and 2 pinch of salt)

INGREDIENTS:-

Papaya:1/2 cup(cut into large pieces)
Potato:1 large(peeled and cut into large pieces)
Pumpkin-1/2 cup(cut into large pieces)
Beans-3/4 cup(cut into 2 inch long pieces)
Eggplant-1 medium(cut into medium size pieces)
Drumstick-2(cut into 2 inch long pieces)
Raw banana-1(cut into medium size pieces)
Pigeon pea(Harad/toor dal)-2 cups
Grated ginger-2 tbsp
Panch phutan-1 tsp(Cumin seeds,Mustard Seeds,Fenugreek seeds,Fennel seeds,Nigella seeds)
Grated coconut-1/2 cup
Turmeric powder-1 tsp
Asafetida powder-1/4 tsp

Salt to taste

COCONUT RICE

INGREDIENTS:-

Basmati Rice-2 cups
Grated coconut-1 1/2 cups
Coconut oil-3 tbsp
Chopped ginger-2 tsp
Channa dal-2 tsp
Urad dal-2 tsp
Curry leaves-4
Green Chillies-2
Cashew nuts-1 1/2 tbsp
Asafetida powder-1/4 tsp
Mustard seeds-1 tsp
Cumin seeds-1/2 tsp
Dry red chili-2
Cinnamon stick-2
Cardamom-2
Bay leaves-2
Cloves-4
Milk-1/2 cup
Sugar-2 tsp
Salt to taste
Water-4 cups

METHOD:-

1-Wash and soaked rice in water for at least 20 min.
2-In a pressure cooker heat coconut oil,add dry red chili,ginger,cumin seeds,mustard seeds,whole garam masala and saute till they splutter,
3-Then add channa dal,urad dal,green chillies,cashew nuts till they turns slightly brown.
4-Then add curry leaves,salt,sugar,asafetida powder and coconut and stir fry for 2 mins.
5-Gently cook the coconut mixture till the coconut turns a toasted reddish-brown and becomes quite crisp.It burns easily,
so don't take your eyes off it for a second,and keep the coconut moving by stirring and tossing constantly.
