RAGDA PATTICE

Ragda pattice is a popular Indian fast food or snack which forms part of the famous street food of Mumbai, India. The word "pattice" is colloquial for "patty" or "patties". This snack is usually served at fast food restaurants that offer Indian fast food along with other dishes available through the day. It is also a main item on menus of food stalls which scatter the city at busy places. These food stalls also serve up other relished snacks such as the equally famous "bhel puri" and "pani puri". This dish has two parts-ragda, a dried yellow pea soup and pattice, a fried potato cutlet.





 INGREDIENTS:-

FOR RAGDA:

Dried yellow Peas-1 cup
Chopped Onion-1
Chopped Tomato-1
Ginger-garlic paste-1 tsp
Chopped Green Chilies-2
Red chili powder-1/2 tsp or to taste
Turmeric powder-1/4 tsp
Coriander powder-1 tsp
Cumin powder-1/2 tsp
Garam masala powder-1 tsp
Chat masala-1 tsp
Cumin Seeds-1/2 tsp
Black salt-1/2 tsp
Salt to taste
Oil-1 tbsp

FOR PATTICE:

Boiled potatoes-4 medium
Bread Crumbs–3 tbsp
Cornflour-1 tbsp
Finely chopped Green chili-1
Chopped coriander leaves-2 tbsp
Turmeric powder-1/2 tsp
Red chili powder-1/4 tsp(if needed)
Coriander powder-1 tsp
Roasted cumin and chili powder-1 tsp
Salt to taste
Cooking spray

FOR ASSEMBLE:

Sweet thick curd-2 tbsp(mix 1 tsp sugar and a pinch of salt)f
Green Chutney-4 tsp
Tamarind chutney-4 tsp
Chopped onion-1 tbsp
Chopped cucumber-1 tbsp
Chopped green chili-2
Chopped coriander leaves-1 tbsp
Tomato ketchup(optional)-4 tsp
Chat masala-2 pinch
Black salt-2 pinch
Sev








METHOD:-

FOR RAGDA:

1-Wash and soak dried peas upto 6-8 hours or over night.
2-Drain it and add it to pressure cooker.Add some salt,1/2 tsp of turmeric powder and 2 cups of water
and pressure cook it for 4 whistles or till very soft.(whistles are depend upon your pressure cooker)
3-In a pan heat oil,add cumin seeds when it splutters add  chopped green chillies and the chopped onions.
4-Once the Onion turns golden brown,add the ginger-garlic paste and fry till the oil separates from the frying pan.
5-Then add salt,turmeric,chili,coriander,cumin and garam masala powder,mix properly.
6-Add chopped tomato and cook for few more minutes till tomatoes are done.
7-Then add the boiled peas,mix well and cook for 5-10 mins.(If possible mash some peas)
8-Sprinkle chat masala and black salt on it and mix properly.Now ragada is ready keep aside.



FOR PATTICE:

1-Take the boiled potatoes and mash them well.
2-Add all ingredients given above the ingredients for pattice and mix well.
3-Make small ball shaped parts of it and then press it gently from above to give the shape in picture.
4-Heat a flat pan,spray cooking oil on it.Place the shaped pattice on it and let that side fry.
5-Once its golden brown,flip the sides and do the same for other sides.Pattice are ready keep aside.







 FOR ASSEMBLE:

1-In a serving bowl or plate,take some hot ragda then place two pattices on it.
2-Top some chopped onions,cucumber,green chilies and coriander leaves.
3-Drizzle sweet curd,tomato ketchup,tamarind and green chutney.
4-On top sprinkle chat masala and sev then serve hot and enjoy.
