MACHA PATURI

Fish Paturi or Maacha Paturi is a famous royal dish in eastern part of India.Generally fish is sliced evenly,and then wrapped in a banana leaf, after the fish has been hit by a basting of freshly pasted mustard with a hint of mustard oil, chili, turmeric and salt.So let's start..........



INGREDIENTS:-

Fish-4 pieces(You can use Rohu,Carp,Hilsa,Bekti,Tilapia,Salmon,Swai or See bass.I used Hilsa)
Mustard seeds-1/2 cup
Mustard oil-1 tbsp
Turmeric powder-1/4 tsp+2 pinch
Grated coconut-2 tbsp
Red chili powder-1/8 tsp
Slit or chopped green chilies-4
Banana leaves or pumpkin leaves or bottle gourd leaves or cabbage leaves or silver foil-4(Usually Banana leaf is used for this recipe,but I couldn't find it.I wanted to give a leafy flavor for this recipe,that's why I used cabbage leaf.)


FOR PASTE-

Mustard seeds-3 tbsp
Poppy seeds-1 tbsp
Dry red chilies-4-5
Garlic cloves-4-5


 METHOD:-

1-Soak mustard seeds and Poppy seeds in water for 20 minutes.
2-Drain and put in a blender jar along with red chilies,garlic cloves,2 pinch of turmeric,salt and a splash of water make a thick paste.
3-Wash the Fishes and marinate it with mustard paste,turmeric,red Chili Powder,salt and mustard Oil and mix well.Keep it aside for 30 mins.
4-Place a piece of fish at the center of a leaf or a foil and add some marinade on it.
5-Sprinkle some grated coconut and slitted or chopped green chilies.Add few drops of mustard oil.
6-Fold the leaf from each side and make it a square parcel and tie with thread that the parcels will not open while cooking.
7-Repeat with the rest of the pieces and steam for 18-20 minutes in a steamer
8-Mouthwatering paturi is ready to be served.Remove the threads and Serve with plain rice.

NOTE-I used rice cooker steamer,you can use idli or dhokla steamer or pressure cooker or you can also bake in oven.
Pressure cooker-Add 1 cup of water in pressure cooker,place all parcels,remove the weight and cook it for 14-15 minutes.
OVEN-Place the parcels on a oven proof tray.Pre-heat oven to 350F.Bake fish parcels for 24-25 minutes.
