Those that enjoy coffee will love the delicious flavor of mocha cake. This is a very moist and rich cake that gets a lot of its flavor from cocoa powder and instant coffee. If you want to up the coffee flavor you can add more than 1 tablespoon of instant coffee powder. You could try 2 or 3 tablespoons. After the cake is baked, it is then topped with a mocha frosting. All-purpose flour-2 cups
Unsweetened cocoa powder-2/3 cup
Vegetable oil-1/2 cup
Baking powder-1 tsp
Baking soda-2 tsp
Instant coffee powder-
Hot water-1 cup
Heavy Cream-500 ml
Cocoa powder-1/2 cup
Very finely ground coffee beans-1 tbsp (or instant coffee granules)
1-Pre-heat the oven to 350 degrees and grease 2 (9 inch) round cake pans.
2-In a large bowl add flour,sugar,cocoa powder,oil,eggs,yogurt,baking powder,baking soda, and salt.
3-Dissolve instant coffee in hot water and add it to the mixing bowl.Beat on medium speed for 2 minutes until smooth.
4-The batter will be thin.Pour into prepared cake pans.Bake for 30 to 35 minutes or until a toothpick comes out clean.
5-Remove from the oven and cool for 10 minutes.Remove the cake from the baking pans and finish cooling on wire racks.
6-While the cake is cooling,to make mocha frosting.In bowl of electric stand mixer pour cream,sugar and vanilla.
7-Beat on medium high until soft peaks begin to form.Add cocoa and coffee and whip until stiff.Frost cooled cake completely on all sides.
8-You may want to begin with a crumb coat,but it doesn’t matter too much as the frosting is already speckled with coffee.
9-Mocha cake is now ready for decoration.Decorate it by your own creative ideas.
(I am using strawberry slices between the layers of the cake.Strawberries will produce juice and the cake will help absorb the water a bit better.And the juice will keep your cake moist!!Place 1 layer cake On a serving plate.Spread with half of the mocha frosting.Then Put the fresh sliced strawberries on top of a cake layer.Then top with another layer and spread with remaining half of the mocha frosting.And frost top and sides of cake with remaining frosting.Refrigerate cake until serving time.)
