KESAR PISTA KULFI

Kulfi is a popular frozen dairy dessert from the Indian Subcontinent. It is often described as "traditional Indian Subcontinent ice cream".It is popular throughout places such as India, Pakistan, Bangladesh, Nepal, Burma (Myanmar), and the Middle East, and widely available in Indian restaurants in Europe, East Asia and North America.Traditionally in India, kulfi is sold by vendors called kulfiwala who keep the kulfi frozen by placing the moulds inside a large earthenware pot called a "matka", filled with ice and salt. It is served on a leaf or frozen onto a stick. It can be garnished with pistachios, cardamom and similar. Often it is served as "falooda kulfi", which is kulfi with rice noodles, rose or any flavour sugar syrup and other ingredients. Popular flavours include pistachio, mango, vanilla, and rose.





INGREDIENTS:-

Sweetened Condensed Milk-14 oz(1 can)
Evaporated Milk–12 oz(1 can)
Whole Milk-4 cups
Coarsely ground Pistachio-1/4 cup
Saffron (Kesar)–1 big pinch
cardamom powder-1/2 tsp
Thinly chopped pistachios-1/4 cup

METHOD:-

1-Mix condensed milk,evaporate milk and whole milk.
2-Heat this mixture on low-medium flame in a thick-bottom pan.
3-Bring mixture to boil until it thickens, stirring continuously.
4-Finally stir in the cardamom powder, saffron and ground pistachios.
5-Turn off the heat and let it cool down completely.Pour the milk in the moulds until 3/4th full.
6-Sprinkle some chopped pistachios on it.seal them airtight and freeze them in the refrigerator until it become solid (For at least 4-6 hour).
7-Before serving run warm water over the moulds to loosen the kulfi and gently take them out.
[You can use only whole milk.This is traditional way.Bring to boil 2 ltrs whole milk.Once it reduce to about 750 ltrs add all pistachio,sugar,cardamom and saffron and fridge them in the refrigirator or you can mix 1 can condensed milk,1 cup whole milk ,1 cup whipped cream,pistachio,cardamom and saffron or bring to boil 1 ltr of whole milk add some bread mixture(2 white pieces of bread grind with little milk)]
