ROASTED PEANUT CHUTNEY




 INGREDIENTS:-

Peanuts-1/2 cup
Grated coconut-2 tbsp
Chopped onions-2 tbsp
Dry Red Chillies-2
Garlic cloves-2
Tamarind paste-2 tsp
Water-1 tbsp+1/2 cup
Sugar-a pinch
Salt to taste

FOR TADKA:

Mustard seeds-1/2 tsp
Chana dal-1/4 tsp
Urad dal-1/4 tsp
Dry red chili-1
Curry leaves-4
Asafetida-a pinch
Oil-2 tsp


 METHOD:-

1-Roast the peanuts until brown and the skin starts to peel off about 10 mins or so.Once cool,rub them between your palms and remove the skin.
2-In a pan heat 1/2 tsp oil,add grated coconut,chopped onions,garlic,red chilies and saute till slightly browned.Remove from heat and cool down for 5-10 mins.
3-Then in a mixer grinder add roasted peanuts,coconut-onion mixture,tamarind paste,salt,sugar and water and grind to a smooth paste.Add 1/2 cup of water,mix well and keep aside.
4-Heat remaining oil,add mustard seeds,chana-urad dal,curry leaves,dry chili and asafetida,fry till the mustard seeds pop and the dals turn golden brown.
5-Remove from heat and dunk into the ground chutney,mix well and serve with idli or dosa.
