OMELET CURRY

Omelet Curry is a very simple main course egg gravy dish. The exact recipe varies all over the world as nearly every culture prepares omelets that are dunked in a gravy and served as a main meal, breakfast dish or a snack.


INGREDIENTS:-

FOR OMELET:

EGGS-2
Milk-1/4 tsp
Chopped Onion-1 tsp
Ginger-garlic paste-1/4 tsp
Red chili powder-1/2 tsp
Turmeric powder-1/4 tsp
Salt and pepper to taste
Oil/spray

FOR CURRY:

Chopped onions-1 medium
Chopped tomato-1 medium
Boiled potato-1 large(cut into cubes)
Ginger-garlic paste-2 tsp
Dry red chili-2
Bay leaves-1
Cumin seeds-1 tsp
Turmeric powder-1 tsp
Coriander powder-1/4 tsp
Chili powder-1 tsp
Cumin powder-1/4 tsp
Garam masala-1/4 tsp
Dry fenugreeks leaves-1/2 tsp
Salt to taste
Oil-1 tbsp
Water-1 cup
Fresh chopped coriander leaves-1 tbsp

METHOD:-

1-In a bowl add onion,ginger-garlic paste,chili powder,turmeric powder,salt and pepper and mix well.


2-Add egg and milk, whisk with a fork until soft peaks form.


 3-Heat oil in an omelet pan,pour omelet mixture into pan,spread it evenly and cook till mixture begin to set on bottom.


4-Once it turn golden color remove carefully,let it cool down and then cut into desired shapes(square/rectangle).keep aside.


5-In a pan or kadhai heat 1 tbsp oil,add dry red chilies,cumin seeds and bay leaves and allow to splutter.
6-Then add chopped onions and fry till it turns golden brown in colour,then add Ginger-garlic paste and fry till oil starts to separate.
7-Then add salt,turmeric powder,cumin powder,coriander powder,garam masala powder,chili powder and dry fenugeek leaves to it and saute for 2 mins.


8-Add the chopped tomato and cook for 5 mins for it to soften.


9-Then add boiled potato and mix well.Add water and cover with a lid and cook on a low heat for 10-12 minutes or until done(the gravy slightly thicken)
10-Gently add omelet pieces and mix well.Cook again on a low heat for 8 minutes or until done and gravy well coated on omelet.


11-Sprinkle chopped coriander leaves and Serve hot.
