INDO-CHINESE EGG CHICKEN FRIED RICE



INGREDIENTS:-

Rice-2 cups
Cabbage-1 cup (finely chopped)
Beans-10 cut in diagonals
Green peas-1/2 cup
Sliced Carrots-1 large
Sliced Onions-1 big
Green Chillies-3 (finely chopped)
Ginger-1 tbsp(finely chopped)
Garlic-1 tbsp(finely chopped)
Soya Sauce-2 tbsp
Vinegar-1 tsp
Red Chili Sauce-1 tsp
Azinomoto-a pinch
Sugar-1 tsp
Oil-3 tbsp
Salt,chili powder and pepper to taste
Spring Onion-3 finely chopped for garnishing

FOR NON-VEGETARIAN:

Chopped chicken breast-1 cup
Egg-2

METHOD:-

1-Soak rice in water for 30 mins and cook it with adding a little salt and 1 tbsp oil
2-After 75% cooked,drain and add some cold water and drain again and set aside.
3-In a pan heat 1 tbsp oil,add the chopped chicken breasts and salt,cook till juices run clear,remove from pan and keep aside,reserve oil in pan


4-Reheat pan,add eggs,salt and pepper and scramble for a few minutes,remove from pan and keep aside.


5-Add remaining oil,after it heats up,add chopped ginger,garlic and green chili and mix well.Add onion and fry for 1 mins.


6-Then add all the vegetables and toss well, add some salt and chili powder(optional)and cook it for 6-8 mins on high heat.Add 1 tbsp soya sauce and 1/2 tsp vinegar,mix well and stir for 30 secs.


7-Add fried chicken and egg,mix properly and then add cooked rice and toss well.Stir constantly.


8-Sprinkle salt(if you need),sugar,pepper,remaining soya sauce and vinegar,red chili sauce,ajinomoto and mix well,stir for 2 min and remove from heat.



9-Garnish with spring onion and serve hot with chicken Manchurian and Chili chicken(for vegetarian serve with veg Manchurian and chili cauliflower)
