Basmati Rice-2 cups
Grated coconut-1 1/2 cups
Coconut oil-3 tbsp
Chopped ginger-2 tsp
Channa dal-2 tsp
Urad dal-2 tsp
Curry leaves-4
Green Chillies-2
Cashew nuts-1 1/2 tbsp
Asafetida powder-1/4 tsp
Mustard seeds-1 tsp
Cumin seeds-1/2 tsp
Dry red chili-2
Cinnamon stick-2
Bay leaves-2
Milk-1/2 cup
Sugar-2 tsp
Salt to taste
Water-4 cups


1-Wash and soaked rice in water for at least 20 min.
2-In a pressure cooker heat coconut oil,add dry red chili,ginger,cumin seeds,mustard seeds,whole garam masala and saute till they splutter,
3-Then add channa dal,urad dal,green chillies,cashew nuts till they turns slightly brown.
4-Then add curry leaves,salt,sugar,asafetida powder and coconut and stir fry for 2 mins.
5-Gently cook the coconut mixture till the coconut turns a toasted reddish-brown and becomes quite crisp.It burns easily,
so don't take your eyes off it for a second,and keep the coconut moving by stirring and tossing constantly.
6-Add rice and mix well until combined and fry for 2-3 mins.
7-Add 4 cups water and milk,cover and pressure cook till 2 whistles,then remove from the heat.
8-Wait until pressure from cooker is gone before opening cooker lid,then serve hot.
